One of my favorite go to comfort foods are soups. A great soup is really hearty, easy to make in one pot and doesn’t need a long list of ingredients. Zuppa Toscana or better translated to “Tuscan Soup” is a perfect choice when you don’t have much time to prepare a meal.

If you love the flavors of potatoes, kale and delicious Italian sausage, you are going to really enjoy this tasty and easy to prepare soup.

Ingredients

  • 1 lb Italian Sausage (mild or spicy)
  • 1 package of bacon, diced
  • 1 yellow onion, large, diced
  • 4 garlic cloves, minced
  • 4-6 cups of chicken broth (low-sodium)
  • 1 bag of small Yukon Gold potatoes, cut in half
  • 1 cup heavy cream
  • 1 bag of kale
  • salt & pepper to taste
  • a pinch of red pepper flakes to taste

Directions

  1. Heat a large pan at medium heat temperature. Add 1-2 tablespoons of your favorite olive oil. Add Italian sausage, allow it to start browning and break up sausage into small pieces. Allow it cook through, remove from heat and drain sausage on paper towel. Set aside.
  2. Begin to fry bacon in the same pan used for sausage. Fry until crispy and remove from heat and set aside
  3. Add diced onion and minced garlic cloves into pan with drippings of sausage and bacon. Cook until caramelized
  4. Pour in chicken stock, add potatoes and bring pot to a boil for about 20 minutes or until potatoes are fork tender.
  5. Add in cooked Italian sausage, bacon, kale and heavy cream. Lower heat to low/medium and cook for another 8 minutes. Add salt, pepper and red pepper flakes to taste.
  6. I like to add a little shredded Parmigiano-Reggiano on top to garnish. Bon Apetit!!!
