Tomato and Basil Salad

Good food does not have to be complicated! I love easy to prepare meals with not a lot of complex ingredients. These gorgeous tomatoes and fresh basil were picked from my own organic garden earlier this week.

Great skin starts with healthy food! I love this easy to prepare salad not only for its simplicity but all the added benefits of its two main ingredients.

Tomatoes are very high in antioxidants beta-carotene and lycopene. Tomato seeds fight free radicals and help minimize inflammation.    Rich in Calcium, tomatoes improve bone strength and bone formation.  Helping maintain healthy strong teeth. Vitamin C brightens and softens your skin.

Basil has antibacterial properties.  Its is also an anti-inflammatory, a powerful antioxidant

Recipe

  • Dice 2-3 cups of vine ripened tomatoes
  • Julienne 1 cup of fresh Basil
  • Add both ingredients into mixing bowl
  • Finally chop 2 cloves of garlic & 1 shallot
  • Lightly drizzle with your favorite extra virgin olive oil and balsamic vinegar
  • Salt & Pepper to taste
